A dual-purpose breed (milk and meat), known for producing juicy beef with a consistent grain. Its balance between tenderness and flavor makes it a versatile and high-quality meat.
Remove the meat from the refrigerator 30 minutes to 1 hour before cooking and take it out of its vacuum packaging so it can return to room temperature. This ensures a more even cooking process.
Ideal for refined preparations. Suitable for precise cooking (tournedos, low-temperature roast). Thermometer recommended (54–56°C / 129–133°F for medium-rare).
